Slow baked, two pieces with different seasoning
Corn on the cob
Collard greens

FLFC turned 13 last week. He is now on some medication and his appetite has improved, but not his finicky tastes. I think he has gained back some weight. He will get some of the pork and his usual mini-burger as well as some dog food.

I'm home alone all week so it'll be simple meals.

Grilled hamburgers with Provolone cheese on English muffins with pizza sauce on top.

Cucumber salad with tomatoes and chopped onion topped with oil and vinegar.

An ice cold beer to accompany the burgers.

Pepperidge Farm cookies for dessert.

plum crumble for dessert



Guess who got a produce box today...

I keep hoping for peaches but haven't gotten any yet.

prep two boxes of au gratin potatoes in 13x9 dish, throw in a small bag of frozen broccoli, lay a keilbasa on top and bake as directed.

Use a bit less water than the direction call for, though, cause the frozen broccoli will add water.

2 night's meal for 2 people, and yummy AF.

I do one box, layer in the ham, do another layer, then top with shredded cheese and Panko. Good stuff. I’ll have to try your kielbasa version!

... “hidden” veggies because my youngest won’t eat veg. 🙄 I made a big skillet of eggplant, spinach, onion, green peppers and garlic and softened them in butter then simmered a bit in veggie broth. I whizzed them up in the Ninja then back in the skillet with some spaghetti sauce. Then browned impossible burger, meaty portobellos and added them with cream cheese in the sauce.

She ate happily.

Pretty sure she (and my meat loving hub) also missed that I cut the Parmesan “shake cheese” with nutritional yeast and powdered dried shiitakes. 😃 I am evil.

Italian salad, garlic bread made with black garlic.

No dessert. I meant to make cheesecake but it didn’t happen. I took a nap.
