Roasted lamb steaks.
Squash roast. The RG took a variety of squash I'd grown in my gardens--zucchini, both yellow and green, plus variegated, Mexican squash, grey squash--and mixed them with carrots and onions in olive oil.
Baby arugula salad. We like it just plain, no dressing.
Dessert: half a chocolate bar each.

(1,089 posts)Annie's frozen enchiladas, I made rice with corn beans, and salsa ahead of time, and a avacado, onion, and Lancaster County tomato salad. Dessert? My husband has been snacking on saltwater taffy all day (we took a long hike, and I agree with you, chocolate is on the menu for dessert for me !

We'll have our "Sunday Dinner" tomorrow for the holiday.
Dessert will be the last of the cantaloupe melon.

Cubes of chicken marinated in a spicy olive oil sauce will be grilled. Toasted pita bread makes the base then put tzatziki sauce on top, (plain yogurt, minced cucumber, minced onion and dill). Put the chicken on the bread and add shredded lettuce, cubes of tomatoes, a drizzle of tahini sauce and a splash of hot sauce.
A delicious one-plate meal!
