What's for Dinner, Sun., Sept. 20, 2020

Beef soup with carrots, onions, potatoes.

Interesting and very delicious salad, something I would never have thought of. Cucumber-corn salad. Cucumber, onion, and red wine vinegar mixed together. Then add corn cut from the cob and cooked in butter and sage. Mix all in cream sauce of whipping cream and mayo. The RG came up with that. I can't get enough of it.

Dessert is an innovation, too. I had made some shortbread cookies. The RG made chutney. We put the chutney (made with figs) on top of hollowed out fig, then on top of the cookie, added a tiny bit of ice cream, and a dab of apricot preserves.

To drink, orange spice tea mixed with chai. Hot. A big mug of it.

Frird in Crisco. Breaded with corn meal, flour and Dot's pretzel rub. Salt and pepper. And a dash of butter and rice vinegar as they are cooking.

Dry and cool weather, so beef soup with carrots, onions, celery, potatoes, and tomatoes really hit the spot.

For dessert I had a low carb yogurt with a banana creme pie flavor

Hot Earl Grey decaf after.

FLFC and TJ are sleeping, so I didn't get to have dinner with him. TJ is sleeping off a night at the medical center labs and FLFC is sleeping off a night of worrying when she would get home.

I was going to make a Sunday roast, but it hadn't thawed enough, so I'll cook it tomorrow.

1/2 a stuffed pepper
side of pasta w/ homemade tomato sauce

I popped some popcorn to have while watching the football game.
