A Nice Substantial Snack...

A staple of my upbringing was a particular brand of canned lima beans and ham.

I have tried to replicate it with fair success, but doing it right with dry butterbeans takes a good deal of time, and does not readily scale down. It involves ketchup, molasses, and a little bit of dry mustard.

I have worked out recently a quick, single serving approximation.

One strip of bacon, cut into a few pieces.

One can of butterbeans.

About a quarter cup of ketchup.

A heaping tablespoon of dark brown sugar.

Fry the bacon pieces a bit, till some of the fat is rendered. It does not need to be browned.

Add remaining ingredients. Do not drain the beans.

Keep on a bit of a boil for fifteen to twenty minutes, reducing the liquid to a pretty thick state.

Salt and pepper to taste, but a bit of hot sauce does not go amiss.

Presoak or not, some dice ham, a celery stalk with leaves, some onion and cook over very low heat until done. Salt n pepper of course. Cooks down to a thick soupy consistency.
