What's for Dinner, Sun., Nov. 1, 2020

Quiche made with leek and zucchini; cheddar cheese. Also bacon.




Tossed green salad with carrots, radish, scallion, tomato, pepper, and celery. French dressing.

Broccoli salad with cranberries, raisins, onion, and toasted almond. Mayo with cider vinegar, sweetened a bit, for the dressing.

Tried a new drink tonight. It's called Aqua Kefir and the flavor was pineapple peach. Kinda' like kombucha but they call it a probiotic drink.

Nobody's in the mood for dessert tonight. Maybe an apple later.

Your quiche looks wonderful!!!!

The stuffing for the eggplant is: ground turkey, rice, bacon, onions, red bell pepper, carrots, garlic, oregano and parsley.

We're having spaghetti w/ olive oil and garlic on the side.

Dessert is NC Lemon Pie.

I love the beginning of the month--food-wise.

Left-over steak will be sliced up for tacos with jack cheese, shredded lettuce, chopped onion, thinly sliced jalapeño peppers, tomato chunks, taco sauce and a dollop of sour cream.

Freshly made guacamole with large tortilla chips.

Yellow rice and homemade (& special!) refried beans.

Shots of tequila with salt and lime followed by iced tea chasers.

No dessert for us, either.

Do you haver any special ideas for Tuesday evening's dinner? I haven't come up with a theme that isn't kitschy.

the RG makes really good nachos, where he puts each individual chip on a baking sheet and puts the cheese, ground pork, jalapenos, etc. on them individually.

In addition, we're making guacamole.

We're having other people in our "pod" stop by so we're going to put out two pizzas, too. One is thin crust caramelized onion and mushroom with gruyere and the other is a margherita.

I have some small peppers that I'm stuffing with crab cream cheese dip. I tried it out on crackers today and it passed the test.

Let us know what you come up with!

14. All American in honor of Election Day

Appetizers:
Vegetable crudités including carrots, celery, various olives and sliced radishes. Without American farmers, we wouldn't be able to eat so well.

Entree:
Four meat loaf with ground pork, beef, veal and lamb along with whisked eggs and bread crumbs. They're all blended together symbolizing America's melting pot of diverse peoples.

Mashed potatoes representing Trump and the GOP after Biden/Harris and American voters have finished smashing them.

Steamed green beans with the hope that President Biden will lead us into a greener future.

Beverages:
Yuengling beer with dinner. It's the oldest operating brewing company in the United States.

After dinner, Evan Williams bourbon with ginger ale on the rocks. It's from Kentucky and I'm hoping for a big surprise upset in the Bluegrass State.

Dessert:
Apple pie with Wisconsin cheddar cheese. C'mon, Badgers! Give the Democrats some love!

By the way, I make nachos much the way your RG makes them. I like the un-messiness of the individual bites.

...I made huge casserole dish quiches all the time. I loved it.

I’ve finally come up with a decent crust recipe that’s also easy. Topped it with mushrooms, black olives, and jalapeño peppers.
