(25,862 posts)I am under the impression that most Chinese restaurants in this country get all of the ingredients for their dishes from restaurant supply houses, which is why American Chinese restaurants the food is all exactly alike.
I will be honest and say that when I read about Chinese food in China, I don't think I would like it very much.

(21,646 posts)take out places along with the Chinese all you can eat buffet restaurants that serve the same kind of dishes in mass quantity that are piopular here
I guess they are a newer immigrant group that will keep them open as a business but maybe in smaller towns when the children dont want to continue ? thats it !Gone!
Oh those heavy gravies usually so similar to Campbells brand canned really.
The second wave like Panda dropped a lot of that but kept American style dishes which was a good $$ move as people became more pseudo health conscious imo
What will you see at both authentic and American places ? Steamed rice !

(41,831 posts)Many new comer Asians in San Francisco in the last few years, from Singapore, Malaysia, Indonesia, and of course Vietnam. I love Vietnamese dishes. The Chinese restaurants around here are doing well. Some close down but others spring up in their place. I wish I could eat more at them, but I have way too much Sodium in my life and don't need to eventually go back to the hospital.

(21,646 posts)Authentic mainland Chinese places I would say has great expanded which is change over from Cantonese authentic that used to be more prominent here if you were not seeking American
I like Asian fusion -one of my favorites operated by ....Malaysians!
Also I like Indian Chinese fusion which might not be salty but it is very spicy and now just talking about it I want some IC soup or Manchurian
