Butterscotch streusel banana bread

Butterscotch streusel banana bread (in case the formatting looks messed up)


i love banana bread. it's a sneaky way to get me to eat fruit, which, to be fair, i don't eat enough of. i do like bananas, but either as banana bread or in oatmeal. that said, this recipe, courtesy of a miss sally mckenney, and her book sally's baking addiction, combines bananas and butterscotch wonderfully. if you're feeling like chocolate and walnuts to make a chunky monkey bread, swap equal amounts of the former for the butterscotch chips and pecans.

ingredients - streusel topping

flour, all purpose - .33 cups/40g
sugar, brown, dark - .25 cups/50g
butter, unsalted - .25 cups/60g/about half of a stick
butterscotch chips - .33 cups/85g/plus 2tb for topping once it's baked

ingredients - banana bread

buttter, unsalted - .5 cup/115g/whole stick, room temperature
sugar, brown, dark - .75 cups/150g
eggs - 2
yogurt, greek - .33 cups/80g/can be plain or vanilla
bananas - 2 cups/about 4 large ripe bananas, mashed
vanilla extract - 1tsp
flour, all purpose - 2 cups/250g
salt - .25tsp
cinnamon - .5tsp
pecans - .5 cups/70g/chopped
baking soda - 1tsp

Method
1. Pre-heat oven to 350°F and spray a 9 by 5 loaf pan with non-stick

2. make the streusel by combining all the ingredients in a bowl, cutting the butter in with a pastry cutter or your hands until it resembles coarse crumbs

3. add the butterscotch chips to the streusel and toss to coat, reserve

4. mix the dry ingredients (flour, cinnamon, salt, and baking soda) in a bowl and reserve

5. using a stand mixer with a paddle attachment, cream the butter and sugar together for about 3 minutes, scraping the bowl

6. add eggs one at a time, scraping before adding each one

7. add the mashed bananas, yogurt, and vanilla, beat on medium for about 2 minutes

8. remove bowl from mixer and scrape sides and bottom of the bowl

9. gently fold in the dry ingredients, making sure no flour pockets remain and do not overmix

10. scrape batter into pan and cover top of batter with the streusel mix

11. bake for 60-65 minutes, cover the bread loosely with foil after about 30 minutes to prevent over-browning, bread is done when tester is clean

12. remove from oven and sprinkle the remaining butterscotch chips, let cool in pan completely before removing and serving

Inside out burgers

Otherwise known as the fabled juicy lucy….

Blatant product placement: Chicago Steak Seasoning

inside out cheeseburgers, makes 4 burgers, with buns

item
ground beef, 1 1/2lbs
vidalia onion, thin sliced, 1 onion
shredded cheese (your choice), 1/4cup
penzey's chicago steak seasoning, 2tsp
buns, 4


method
mix meat and steak seasoning
divide meat into 8 equal portions and flatten with a mold or press
top half with onions and 1 tablespoon of cheese, cover with other half of meat
refrigerate up to 1 hour before cooking, overnight would be best
cook on grill or in cast iron for 3-5 minutes per side, or until desired done-ness is achieved.
serve on toasted buns with assorted condiments of your choice

trejo's steak sauce

danny trejo is not just another pretty face... that goes without saying. that said, i was surprised to see that he had released a cook book. naturally, poor impulse control took over and i went out and bought it. trejo's tacos is not an encyclopediac treatise on mexican food, which is fine by me. the diversity of his recipes is pretty nice and i can honestly say that i hadn't expected recipes for doughnuts. this recipe is el machete's version of a1 steak sauce.

ingredients
garlic cloves, 10, peeled
onion, red 1 large, chopped roughly
chilis, guajillo, dried 6, seeds and stems removed
oil, canola .5 cups or 120ml
juice, lime 1
syrup, agave, 2TB
adobo sauce, 1TB, straight from the can
salt. kosher 2tsp
chipotle chili powder 1tsp
cumin, ground 1tsp
vineager, red wine 1tsp

method
pre-heat oven to 350°
spread the garlic and the diced onions on a parchment or foil lined baking sheet and bake for 45 minutes or golden brown
remove the pan and transfer the vegetable to a blender, place the chilis on the sheet and toast for 3 to 5 minutes or until fragarent
set a medium sauce pan with water to boil, once the peppers are done in the oven, place them into the water and remove from the heat
rest the peppers in the water to soften for at least 20 minutes
remove peppers from the water and chop roughly
add the peppers to the blender with the remaining ingredients and blend until completely smooth
stores for up to 5 days in an air tight container in a refrigerator
