Personally I like them a bit tart, like Haralsons. I don't think First Kiss would be a good pie apple, though, because they might be too juicy, though they are fairly firm and might not cook down too much. Will have to try Ambrosia.

I have some Rave apples in my fridge right now. Not bad, but I prefer Ambrosia apples.

Years ago I found "Ida M" apples, which were absolutely the best for baking and cooking...

we have an heirloom apple lady(elderly) at our farmer's market. she dives history's for most of them
