Most people don't cook turkey more than once a year. Manufactures can't make money of items that are so specialized.

It really isn't hard to simmer giblets and those are available now. Get some, freeze some. DYI turkey stock. Also, after the bird is cooked, carved, and leftovers put in the fridge, I always bundle the bones in foil and freeze so I can make turkey soup a few weeks later.
