1. I learned at a young age how to make Italian Meringue

However, I knew it as Susan’s Fluffy Frosting. It wasn’t until I was an adult that I learned the correct name. I also learned about Swiss Meringue which is similar except you warm the egg whites and sugar over boiling water until the sugar dissolves and then whip them with a whisk attachment. I have never made it as I prefer the Italian style better. Something about watching the sugar and water boiling and making wonderful bubbles.

These Meringues can also be adapted to make Buttercream Frosting. I’d love to try making it but afraid of messing it up.

Pro tip: do not use plastic bowls if at all possible. I learned this the hard way. Metal bowls or glass bowls work the best. I also only use Dawn dish soap to help eliminate the possibility of grease being present.

I recently made an Envy Apple Spice cake because I didn’t like the variety of apples I bought. It was way too moist for me and I didn’t like it. However, I made some cream cheese frosting and that changed everything. I prefer Cosmic Crisp Apples they are sweet/tart and 😋
