. . . Their color, their texture, their, ahem... taste. . . . Watching my sodium levels means that any canned vegetable is the LAST think I look for unless I'm really desperate. I used to like the convenience of canned beans (expecially kidney), but because of that concern over sodium... I've now learned the value (in all SORTS of ways) of dried beans. . . .

fresh is fine raw in a salad, and frozen is better for cooking (pizza topping, spanokopita etc) but for a side dish - canned. With bacon grease.

and that's funny, because i don't think peas taste like peas when they're canned. fresh peas are the best, you can even eat them raw, they're so good! :)

Straight out of the can. Yeah, I know :puke: But that was the only way I ever had asparagus until well after I went to college. Now I only buy fresh and cook it only until it's tender/crisp.

Not as much as I like fresh, but it's not bad. I buy it to put on salads in the summer for a little variety.

I don't eat frozen or fresh peas but I like the canned ones. Could depend on the company that makes them though. I only used to get the ones in the silver can, can't think of the name of the company off the top of my head... Lesur maybe? Ok, found it... it's Le Sueur. I was close.

and some other glop that was really yummy. She baked it in the oven in a casserole dish with some kind of breadcrumb stuff on top, and it smelled sooooo good but seemed to take forever to cook. I'll have to find the recipe somewhere. I bet one of my brothers has it.

That's what I use for my pasta sauces. It's a rarity that I'll be able to make anything better with fresh tomatoes. If I am able to, it's generally a LOT more expensive and much more time consuming.

Spinach, asparagus, corn, creamed corn, those I like. I heat green beans and don't care for any other canned veggie.

especially if it's something that cooks for a long time. I use canned when I make my quickie ground-beef stroganoff or salisbury steak. Fresh mushrooms cook away sometimes.

I prefer fresh or frozen to canned in just about everything but I'm not a fan a mushrooms regardless of how they come. But I will keep a few cans for certain recipes.

We'd take a can of them into the bathroom and throw them at the mirror, where they would make a satisfying gray-green SPLAT. Mom soon found out about this game and made us stop, but it was fun while it lasted.
Eating them was another matter...
