Commercial kitchens?

Does anyone know of a commercial kitchen I might be able to rent by the hour/day?

I have an idea for a food company, but all food for sale has to be made in a commercial (read: industrial) kitchen with the proper equipment, storage facilities, etc that can be inspected.

I will have access to one late fall/early winter near me. It's a building near Hillsborough that will be repurposed for that.

But I need a place to work with in the meantime.

1. Might be able to call a favor

You have probably already searched for obvious places that have commercial kitchens with current inspections: off-hours at a small restaurant not open for breakfast or only open breakfast & lunch; a (private) school with lunch facility; a large church (probably has too many constraints); a banquet or meeting hall with fraternal or other group; a local restaurant going out of busineess (see landlord, assuming fixtures not being seized).
