I have the hero's journey, 3 act story down pat, but could use more structure ideas.

I'm learning that in a Memoir, there are no hardfast rules. I thought it was pretty neat when they explained that Eat, Pray, Love was actually three sets of three acts based on the hero's journey. Once someone reveals the formula, I know my story well enough to find the right scenes to plug them in place.
But my story needs at least five to seven acts, unless I do the same thing the author did with Eat, Pray, Love.
