So I'm debating between . . .
Vive le Vegan Vegan with a vengence Everyday Vegan
I cook for two, prefer simple (less than 8 or so ingredients) and quick.
Also, can anyone recommend a good veg crockpot cookbook. I've read the amazon reviews and they seem to get mixed reviews. I'd like to hear from you, my DU vegfriends.

Some of the recipes are a little on the labor-intensive side, but for the most part they're simple. And they're all economical and EXCELLENT! I mostly cook for two people and they're perfect for us with a little left over. My fiance just loves her seitan-portabello stroganoff and her udon noodles with peanut sauce. And her tofu/dill salad sandwiches. :D
I cannot recommend that book highly enough. :thumbsup::thumbsup:
I don't have the other two, so can't comment on those. :hi:
