My daughter, 14 on Thursday, has recently gone from ovo-lacto vegetarian to vegan. I would like to make her a cake. Any suggestions?

It's really easy. I won't use canola oil, I used EVVO but use your oil of choice. It has a decent flavor. I also read that some of the best vegan cup cakes are made with canned pumpkin instead of oil.
1 1/2 cups flour (I used whole wheat) 1 cup white sugar, (I used organic sugar) 3 T baking cocoa 1 tsp baking soda 1/2 tsp salt 5 T canola oil 1 T apple cider vinegar (or white vinegar) 1 tsp vanilla 1 cup cold water
Whisk together the dry ingredients in a bowl. Make three "holes" in the mixture. Distribute the oil, vinegar and vanilla in said holes. Pour over a cup of cold water, whisk thoroughly. Beat the tar out of it. Pour into an ungreased 8x8 pan, bake for 30 minutes at 350 degrees.
You can double this and make a 9x13 cake, the baking time doesn't increase significantly. Check for doneness after 30 minutes.
Add about 1/2 cup of vegan chocolate chips to the batter after pouring it in the pan, and serve with thawed frozen berries, mixed with a bit of sugar, for a sauce. Or you can frost it or add a tsp of cinnamon.

I normally use extra virgin olive oil for everything, but I bought a new cookbook that specified canola. Can't win for losing!
