I'm going to make a vegetarian spaghetti sauce for tomorrow. I'm planning on adding baby portobellas, onions, and carrots as well as garlic and seasonings. What other vegetables and/or meat substitutes should I include? The vegetarian that this is for is pregnant so I want to make sure it has enough protein.
Thanks.

| 1. I always put some Tofurkey faux sausage in mine. |
|
Just like regular sausage (taste, texture) but meat-free. The Italian Sausage variety (red box) is to die for. http://www.tofurky.com/products/sausages.htm

| 3. I love Nate's Meatless Meatballs, |

but I prefer to bake them in the oven & serve them on the side. They get a bit squishy if you leave them in sauce for a long time. The danger of baking & serving them on the side, though, is that I nosh on them until I've eaten about half of them!
You can find them in the frozen food section of your health food store.

| 4. Great suggestions above. You could also try some Boca Crumbles... |
|
...if you want to make it more of a "meat" sauce. But you can't go wrong with any of the ones already mentioned.
