that'll turn any salad into a high-protein meal!

Today's recipe comes from my friend Trevor Justice, and demonstrates
his whole foods philosophy. Instead of using oil -- which has no
vitamins, minerals, or fiber -- this recipe uses tahini.
Tahini is a nut butter (like peanut butter) but it's made from ground
up sesame seeds. It's common in middle eastern foods like hummus.
Unlike oil, tahini is packed with nutrition and fiber. What's more,
sesame seeds are "alkaline", so they help balance the Ph of your
blood.
At most grocery stores, you can find tahini in one of two places.
Either (1) near the peanut butter and other nut butters. Or (2) in
the ethnic section, which usually includes "Joyva brand". That brand
comes in a metal container with an orange and brown label.
Tangy Tahini Dressing
1 orange, peeled, or 1 cup of fresh orange juice
1 scallion
½ cup tightly packed cilantro
½ tsp sea salt
½ cup tahini
Put the first four ingredients in a blender. Blend. Then add the
tahini and blend again. Voila!
