OK so Bisquick isn't the healthiest thing but it is fast and easy and hey it's Sunday!
1 cup almond milk (or milk sub of your choice) with 1 T fresh lemon juice 1/2 cup of applesauce with 1-1/2 Tablespoon of potato starch disolved in it 1/2 mashed ripe banana 2 T melted margarine
2 cups Bisquick (a little more or less if you like them thinner or thicker)
Mix the first four ingredients together with a whisk, then whisk in the Bisquick
Cook on a HOT griddle or frying pan (i sprayed mine with canola oil first but if it's well seasoned it should be OK)
These were great with berries, almonds and agave syrup and my carnie guests had seconds!

I can't wait to wreak havoc in the kitchen with this recipe.
