| Today's lunch featuring Daiya cheese |

Today we started cooking some pasta. While it was cooking I took some cherry tomatoes and sliced them up and sauteed them in a bit of olive oil with some garlic and onion powder. While they were cooking I added some ground meatless and mushrooms. When the pasta was done I drained it and put it into a bowl. I put some Daiya cheddar and mozzarella cheese on top of the pasta and covered it with the tomato mixture. We then stirred it all together so that the cheese melted into the mix. It was SO good.

That should mimic a sardine/anchovy taste that I find missing from a lot of veggie pasta.
Otherwise...YUM! When do you open the restaurant? :D
