Veggie Beet Sausage

Just had some delicious veggie beet patty sausage for breakfast. I suspect it has some egg in it as a binder, maybe breadcrumbs and onion plus sausage spices. Anyone here have a recipe I can try?

If there are egg eaters here, it might be worth a shot or it could be pretty wrapped around tofu cubes that had been sauteed/dusted with turmeric as a vegan alternative.

Any suggestions for spices?
