It does involve about 3 more steps than I usually devote to meal preparation. I also take into consideration how many pots, pans, bowls and utensils I'll have to clean up, something Mark Bittman probably doesn't need to worry about. Still, it's a nice looking dish and I may try it.

because piecrust was just too calorie laden for me. A savory raised dough of some description baked on top of the chicken, veloute, and veggies worked a lot better for anybody watching their fat intake.
I always seasoned mine with snipped parsley and cracked black pepper. It was heaven.

I always sprinkled a little grated cheese (whatever was in the frig that day) on top of the dough for the last few minutes of baking and the kids just loved it.
