but I suggest the best way to handle the tofu is to cube it, dust it with cornstarch, and deep fry it in small batches in 1/4 cup of oil in the bottom of a wok. Drain on paper towels, pour off all but enough oil for stir frying, add the aromatics, then the broccoli and cover to steam for a minute or two, then add back the tofu, add the rice, and add the soy mixture. Heating the rice shouldn't involve pressing the mixture, something that breaks the tofu apart. Just throw in a few drops of water and cover the pan for a minute or two.
The egg is optional.
Trust me, following the NYT directions will cause the tofu to become mush.
