| 4. Here in the southwest we can get Mexican crema |
|
which is so close as to be indistinguishable. It's really great stuff.

It is relatively expensive. I had never even thought about making it myself. Thanks for the tip. I'm going to try that.

and give it to the misses, {giggle}
that was fun!
I'll try it - though scrambed eggs is like tomato sauce - you make what you like, and you like what you make or you go out....

| 5. What a true statement about the eggs. To me, those eggs looked pasty and unappetizing. |
|
I prefer my scrambled eggs mixed with milk or cream and cooked in large, fluffy curds. I will, however, try his tip on not salting the eggs before cooking as I sometimes have a problem with "weepy" scrambled eggs.

I make perfect scrambled eggs and those aren't it. Blech.
Whip the egg, cook in a hot pan brushed with oil, stir gently just a few times. Pour a tablespoon of milk on some empty pan space just before it's finished to keep them from getting too hard. Perfect. Off to make breakfast, lol.

| 6. I've been cooking my eggs low and slow, and have kept them moving |
|
I'll have to try changing up my technique to see if I like this, if not, it's back to tried and true TommyO eggs.
