I add some finely shredded fennel to it. Use only orange in the dressing and serve it over spinach with some nuts and goat cheese. It's delicious.

I recently read that raw beets have the most nutrition. I wish I could try this but I do not have a food processor. I live alone and a big food processor is not for me. I love beets.

I made a shredded beet salad, but the beets are sauteed. Yummy too though.
