Potroast, gorgonzola gravy and potato dumplings sliced and fried and the last of the garden beets, pickled. Very basic, and very good eat.

so I had rice noodles in broth with lime and chile and veg for lunch and a cup of yogurt for supper.

That's a new one on me. Sounds like a good way to deal with them!
Eggplant and zucchini parmesan here, with lots of cheese, and with lots of fresh basil, caramelized frozen artichoke hearts and roasted cherry tomatoes included. Romaine salad, hot crusty Italian rolls.
Eaten while reading a vintage cookbook of local huckleberry recipes. Mmm -- huckleberry kuchen.

It's been 60 and drizzling for a week, so potroast seemed about right. However, I wouldn't want to have my cholesterol measured right now.

Salmon stuffed tomato on greens. I am using my last can of salmon, my last two tomatoes and the remains of my lettuce with a boiled egg on the side. My veggies get delivered tomorrow, thank goodness. Thinking of fixing brussel sprouts that is in the freezer. It is just too hot to cook in Az.
I never liked canned salmon until I bought Kirlands canned salmon from Costco. It is the best. No bones in it. Now I buy it by bulk. I like tuna also and the only albacore tuna I buy is Kirklands also. I did buy another brand a few months ago, what a different taste and odor. I threw that away. I buy the tuna by bulk also.

From your description, I can imagine what will surely be a very pretty plate. It takes an appetizing arrangement to stimulate the urge to eat when the weather is so outrageously hot. (I did see that it is 115 in Baghdad today!)
I just used my last can of Kirkland's salmon yesterday to make salmon cakes. I crisped them in canola oil and served them simply with a microwaved baked potato (we split a big one) and steamed baby bok choy. Now that we go out for sushi at least once a week, I no longer use canned tuna at home. Tonight, we are having that fantastic Thai chicken noodle soup that I grabbed off this forum last spring. So good, in fact, that it is now in constant rotation on the menu around here.
I bet it is hot in AZ! I just heard a hint from the TV weather forecaster that cooler times are in store for NY ! Now, that's exciting for me! I wish cooler comfort for you. :hi:

It is actually cool 106 (ha! ha!), it was suppose to reach 110.
I notice that you use Kirland salmon - isn't their salmon delicious? I use their pink salmon. I often make salmon patties - they make the best patties.

I love me some canned salmon, for sure. I buy red Deming brand.
Care to share a salmon patty recipe?
I just kind of hate to mix it up with other ingredients because I love it right out of the can. I LOVE to eat that spinal bone - color me weird. I eat it just on soda crackers.
