I need inspiration for the next five days of near-100 degrees.

is a great dish for the dog days of summer.
There are all kinds of recipies out there for it. We keep it simple.
Salmon Rice Salad Cook the rice and while its still warm add chopped celery a can of salmon and your own choice of Italian salad dressing. You can add alll kinds of things like pepper, tomatoes, cucumber, or peas. Serve it cold - and if you want to make it fancy - in little lettuce cups.

I do much the same thing with seafood salad, or cold tuna, or sometimes just cold shrimp. Anything in the vegetable bin in the fridge is fair game...

although I use other seafood besides tinned salmon. I also vary it by using mayo, sour cream, lemon juice, and other flavorings. I find rolling it up in lettuce leaves is better than having it drip out of a sandwich.
