When I make tamales, I use roasted corn kernels in the masa and only use freshly roasted corn. There is no comparison with corn fixed any other way.

This is what I quaintly and lovingly call "unfuckedaroundwith" corn.
Do nothing to it. Do not pull aside the husk to peek. Do not wash. Do not soak. Do not salt. Do not butter.
Do nothing.
Put it on the grill and turn it as the sides darken. Keep grilling. The outer husks may even catch fire.
Persevere and resist the urge to remove it. Just keep turning it. At some point you will see the outline of a few of the individual kernels appearing in the char. That's when its done. It takes 10 to 15 minutes, depending on your fire.
Let it cool a bit. Peel it. Eat it. We never put anything on it at all. Just corn and teeth and tongue.
A variation is to strip away some of the husk until only a layer or two is left. This results in more brown on the actual kernels, but hardly seems, to us, worth the bother.

Oh, yum! I hope it turns out so delicious for you. Roasted corn is so incredible! I've never done it either but I could just park myself outside the roast corn stand at the fair and eat til I explode.

If a kernel or two start to brown up, I turn it.
