These were really easy to make. She had a week of breakfast - but you could freeze these also.
I'm not much of a breakfast person either unless I have some homemade refried beans to put inside of a tortilla with hot sauce on the side of the plate. Now that makes my day!
I am going to make the eggs for a friend who does not cook (only by microwave). He is a vet so, he will love them.

And what a wonderful thing to do for your daughter. You're a great mom! :hug:
I just showed these to my husband, too. I usually bake some kind of quick bread or muffin to pack in his lunch so he can eat it for breakfast when he gets to work. He really needs the protein more in the morning, tho. He thinks they are a great idea, too. So, I will be using this. How exciting!

I sauteed some onion, baby bellas, and yellow squash in olive oil with salt, pepper and a little garlic. I put it in a muffin pan that makes 6 large muffins and topped with fresh spinach and tomato. I cut the parm cheese to 1/2 cup and stirred into the eggs with a little cream. Added some of the egg mix to the cups, topped with some finely shredded cheddar and then a little more of the egg mixture.
The good thing about these is you can put whatever you want in them. These will be perfect for Bill's breakfasts this week.
