Whole wheat bread

Recently made a honey whole wheat that had melted butter and of course honey in it, but that's really not my thing, good as it was. I wanted that straight up nutty whole wheat taste in a more minimal bread


So...

2 cups All purpose flour
2 cups whole wheat flour
2 tsp salt
1 tsp instant yeast
1.5 cups water

mixed the dough, gave a short initial kneading just to incorporate everything evenly, let rest 20 minutes, gave a much longer kneading, covered and let rise 6 hours. Shaped loaf and let proof not too long (30 mins) on greased baking sheet, baked at 400 for 40 minutes.

mmmmm! having some toast right now with the morning tea- nutty, crunchy, nice texture, great flavor! :)

2. I acquired 30 pounds of whole hard red wheat last week for free

thanks to the best-woman-ever on craigslist.

I had a hand-mill in my cupboard that I hadn't used in probably a decade, hauled it out and set it up in the kitchen last night:



and made the best loaf of bread I've had in ages - the fresh ground flour going straight into it was wonderful:



It was a very basic recipe like yours, except I have some flax seed so I added some of that in. I'm going to try gradually increasing the percent of whole grain and letting the next batch age in the fridge for a few days before baking.

Bet it tastes as good as it looks. Look at that oven spring... I def. want to try fresh ground flour at some point....
