| We went camping last weekend and I came up with a new Dutch oven recipe. |

Dutch Oven Chicken and Rice
2 T. oil 2 C. long grain rice 2-3 carrots, cut into 1 inch pieces 2-3 ribs celery, cut into 1 inch pieces 1 envelope dry onion soup mix Chicken broth and water to equal 4 cups 1 chicken, cut into serving sized pieces (or bone-in, skin on chicken pieces) Salt, pepper and seasonings to taste
Heat oil in Dutch oven, add rice and sautee, stirring constantly, until rice looks white and chalky. Add carrots, celery, soup mix and broth/water. Season chicken parts generously and lay on top of rice, skin side up. Cover and cook with 8-10 coals on bottom of Dutch oven and 15-20 coals on top until rice is tender and chicken is cooked through, about 30-45 minutes.
This could also be baked in a 350F oven. A variety of vegetables could be added or substitued for the ones we used. The rice came out fluffy and well-flavored and the chicken was nicely browned, but not dry.

When I got in my camp box, the newspaper I had taken last time for starting fire was dated October 10, 2005. It was a 4 generation camp trip this time. My son and his wife brought their two little boys and my daughter and her husband brought their grandson. We had 2 2 yo and a 3 1/2 yo. We all had a good time.

Ya know Arkansas Granny, the food doesn't even have to be fabulous - it's all about the grandkids, eh?
I must improvise with grand-nephews living on both coasts while I'm in MN, only getting to see them once in a blue moon, but, I get your sentiment :-)

I've been making a variation of that for many years, both on top of the stove and in the oven. I usually use some sour cream or cream too, and it makes gravy. Long ago, people used a can of mushroom soup (when Americans were cooking everything with Campbell's soups).
I'm sure it tasted wonderful out in the campsite. I'm jealous, too!

The Dutch oven was one of the best investments I've made in camp gear. We've cooked some wonderful meals in that old black pot.
