I make be pumpkin pie flavored. I found an idea for doing it - vanilla recipe with canned pumpkin more sugar, pumpkin pie spices (ginger, cinnamon, nutmeg), and pecans added.
I'll keep you advised.

I would think too much moisture in the ice cream will cause it to develop ice crystals.
The method I posted about removes up to 4 fl oz. of moisture. So, check it out, it doesn't require too much effort.

I've made it with leftover fresh pumpkin pie filling, completely finished with all the ingredients but it's been a while.

They call for their "sweet cream base", and add a can of pumpkin, along with some nutmeg and cinnamon, no nuts. I think toasted pecans will be a great addition. One of the grocery store chains down here, Publix, had a Pumpkin Pie version of their store brand ice cream. Instead of nuts, it had chunks of pie crust. It also had a swirl of something that was supposed to mock the whipped cream. It was good stuff. Wish they'd carry it year round.
