I will pick up a pumpkin pie, don't feel like going to bed at oh well very late.
I also heavily modified the recipe, so it is not quite pie, but should be really tasty.
I used the pie innards recipe from Fensler's 1000 gluten free recipees, and the top, in layers... in the oven. Will be baking for about 90 minutes i suspect due to the size of this.
After that will brave the store and go pick up the pie,

so that will be my baking day. I have Chinese takeaway in the fridge for my Thanksgiving meal (I am not overly fond of turkey as a main event) and it's a perfect day to experiment with wheat free baking.
If it works it will be lovely, I've missed having bread crumbs. If it flops, it still might be edible unless the xanthan gum turns it into a brick.
On edit: my favorite apple dessert is apples cored and peeled halfway down and the core stuffed with raisins, chopped pecans, and a little quick oatmeal, brown sugar or maple syrup on top and over the peeled part of the apple. It takes less sugar than you think because the raisins add a great deal of sweetness. Bake 45 minutes to an hour, depending on how hot the oven is and what else you're doing at the same time.

get all the desserts and casseroles made today so we can start the turkey early in the morning. We have made 7 pies, a chocolate cake, cornbread for the dressing and 2 casseroles for side dishes. My DIL is making potato rolls (the dough is rising in the fridge overnight). We will have 12 - 14 people for dinner tomorrow and it is going to be so good.
