a fabulous spinach/swiss cheese "pie" (quiche), but that was eons ago, and I can't find the recipe.

I sweat onions and make a roux and make a full bechemel with a hit of nutmeg. I use that to melt swiss cheese. You can stop here and have a great fondue...but plod on and add tons of chopped frozen spinach that you have defrosted and squeezed all the moisture from.
Then starting with a good base of phyllo, layer the creamed spinach then a few more phyllo layers, spinach......You get the idea.
It's rich and dense and lovely.
Sometimes I even add a bit more shredded cheese in between the layers.
Brush with lots of melted butter and bake until brown and you have something really spectacular.

DAMNED GOOD! I am trying to find out the basic recipe but I want to add things I have the phyllo. I may add some type of bacon too.
