I've mentioned before that a great lunch for me is my Pearito concoction... I actually like doing this a few times a day, so, I try to have small light meals with lots of flavor. I keep a tub of black eyed peas and green peas in the fridge, place a table spoon or so on small tortillas, then I add a little pepper jack cheese, and warm just until the cheese melts. Quick & yummy. But I am really bad about eating the same thing allll the time, so I thought I'd ask you guys for some filling ideas. Anyone have any suggestions for good flavorful combos with minimal prep?

I make that keeps in the fridge and can be reheated and makes great leftovers. You dice up some lightly baked potatoes and sliver up some roasted poblano chiles, and saute in some olive oil. You can put some jack cheese in the taco too.

I like to heat up a can (drained) with water, a little salsa, maybe some garlic and cumin, and then have them on hand in the fridge to use in tacos, burritos, quesadillas, etc. or even on their own as soup.

I actually have a little sensitivity to corn, but I can get away with it in small doses. Yummy. Thank you!

I mix black eyed peas and sweet green peas, then add a little pepper jack cheese and cajun seasoning. WAY better than it sounds.

are pretty simple. Brown ground beef with salt, pepper and garlic. Then, while still in the skillet, mix in a half (or a little more) of a can of refried black beans with between 1/2 to 1 cup of salsa.
For the rest of the fixings I have finely shredded sharp cheddar, sliced black olives, diced tomatoes and onions, homemade guac and some greek yougurt (replaces the sour cream.) Sometimes diced jalepenos.
I put everything in the burrito, including the guac and top with a few shots of Frank's Red Hot before folding up.
If we don't feel like eating meat, I do the same except I make spanish rice to replace the meat but I don't mix it in with the beans, just load them onto the shell seperately.

P.S. If you do the ground beef, do not skip the salt, pepper and garlic thinking it's not needed because of mixing it with the beans and salsa. If you skip it, believe it or not you can tell because you end up with one seriously bland burrito. Even with all the fixings.
