So I made a cherry chocolate short bread cookies and they were a bit underwhelming. Not sure if I baked em a little too long, or if the almond extract was a little too overpowering!

Cherry chocolate shortbread cookies
1 c. butter, softened 1/2 cup sugar 1/2 tsp almond extract 2 c. all purpose flour 1/4 c. cornstarch 1/2 c. dried cherries, finely chopped 1 oz. bittersweet chocolate, finely chopped 1 tbs. sugar
there were ingredients for drizzling choc. on top, I decided to skip that part
Mix butter, sugar and almond extract thoroughly. Blend in cornstarch and flour gradually Add cherries and chocolate
Form into 1 inch balls and place on ungreased baking sheets Use bottom of drinking glass dipped in sugar to gently flatten cookies
Bake in pre-heated 350 degree oven for 20-30 minutes (I was surprised that the recipe wasn't more specific about time) or until bottoms begin to brown.
cool 5 min. on wire rack.
after sitting for a day or 2, they had a less intense (sour?) taste and were more pleasant. I also thought that the almond taste was a bit too much, and that any cherries on the outside of the cookie were more likely to burn/harden.

300 degrees? I think I would cut the almond in half and maybe add vanilla, but I don't like a strong almond flavoring "flavor" as a rule I don't know how you feel about the extra sweetening of candied cherries, but using them might take away the bitter taste if your dried cherries were too sour?

Let them sit awhile and taste them again tomorrow. I think the flavor isn't as distinct when they are warm. Seems the flavors need time to really inundate the butter.
