I splurged, I really did. I bought a goose, and will make that bird tomorrow. I bought it hard as a rock on tuesday so it's been de-thawing since in my fridge.
I will roast the bird and I know that it will take longer than duck... that was almost four hours. So putting it in the oven at 10 in the morning.
Making some rice with it... and cranberry sauce and some veggies.
We intent to spend the day at home... and yes on Sunday we will have enough for leftovers.
It wasn't the cheapest of birds, but hey... it is a once a year treat, really.

I made a similar meal last year on New Years Day, except for 3 of us, I just cooked a duck, a wild rice stuffing with dried apricots and almonds, and a fruit glaze (more apricots).
Alas, I tried to get "creative" with the spices. I was going for something sort of Asian, with ginger, star anise, and sesame oil. But, I kind of overdid it, and it was a little funky tasting, at least on the skin. The meat was ok, as was the rice stuffing.

I did a duck last week.
It is two humans and two parrots... beggy parrots asked for more duck, they really liked it.

no goose. They were talking last weekend on The Splendid Table about how small the meat to fat ratio is on a goose.

and couldn't believe how much they both shrank once the fat was rendered. Of course, then she had a fridge full of goose fat and duck fat for the next six months, which was kind of the idea.
There were about 20 of us there and we all got basically a taste of each and stuffed ourselves on the pot luck sides.

We rarely keep the fat anyway. My dad they used to have I regularly at the farm.
I liked the duck better I think though.
