| If life hands you a bunch of lemons...READ THE RECIPE FIRST!!! |
|
Then you can make Meyer Lemon Marmalade. I bought a bag of beautiful Meyer Lemons without a plan for using them, which is a bad idea in the first place, but since I seldom see them in my grocery stores, I couldn't help myself. That, and I wanted the seeds to save because they make beautiful little trees for houseplants. This morning I ran across a recipe for Meyer Lemon Marmalade and thought I'd whip up a batch. Only after I did all the work (rounding up and washing jars and lids, cleaning out the canning implements, seeding and slicing the lemons, etc.), did I read the recipe all the way through. It clearly stated to put the lemons, seeds, and water in a non-reactive pot and let sit for 24 hours. Will I ever learn???

| 1. Ah, if you just went ahead and made it. |

It would still be good. I made a lemon marm once just using the basic orange recipe either out of the Sure Jell package or the Ball Blue Book (can't recall), with lemons instead, and it worked. This is a quick cook type recipe -- total time with processing and cooking is under an hour. It takes about 2 to 3 weeks to set to a jelled consistency. Since the original called for sour (Seville) oranges, the sugar content is about right with lemons as well.

| 3. I don't know why it needs to sit. The recipe didn't have |

an explanation. I'll give a report when I've bottled it up tomorrow.

I hope it all works well for you, honeychile!
Really, I do wish you luck, but if it doesn't work, you can always put it in the freezer and use it to make granitas, no waste!
