There are beer batter and tempura batters that would work well for both. Also a normal "chicken fried" sort of batter with egg and flour would be good too.

I've tried a lot similar to the recipes you posted, but now I'm wondering what's the best thing to fry them in - oil? what kind; Crisco shortening?; olive oil? or a combination of 2 or 3.
If I make a lot I use the deep fryer, for just a pound or so, a frying pan.
Hey hippywife - who let you out of Fiction? I thought we had to stay there or lose our "membership."

Plain flour Pinch or bicarb Enough beer to make thick batter. Do not beat until smooth, lumpfree and therefore tough. Just whisk together until a reasonable consistency.
Flour the food, dip in batter and fry hot.
