Simmering up some posole tonight. Instead of pork I went with turkey. Broiled two turkey wings and a drumstick till they browned nicely, then simmered them in water for about an hour and a half. Spices added were bay leaf, oregano, garlic, cumin, chili powder and coriander, with a pinch of turmeric for color.
Sauteed half a large onion till it was caramelized, along with some more garlic.
Removed the turkey to a plate to cool and added 3 chopped carrots, 3 chopped celery ribs and the onions/garlic mixture to the pot. Seeded 3 dried new mexico chilies and added them to the pot.
Simmered for 10 minutes or so then added 2 cans of drained and rinsed hominy - Juanita brand 29 oz cans. brought that back to a simmer, then added about a cup of crushed tomatoes, and more spices (same blend as above). removed the meat from the wings and drumstick and added it to the pot, simmered for another 15 minutes.
Not exactly authentic probably, but a darn good tasting turkey posole if I don't say so myself! It has a very nice glow from the chilies.
Who wants a bowl!

p.s. after I stripped the turkey bones, I realized they had a lot of flavor left in 'em so I'm boiling them again to make stock...

I love posole! I am so lucky that I get it fairly frequently. One of our cooks is from Mexico and he will make it for the employees often because we all love it. :9
ETA: This is the ONLY way I will eat hominy. I hate the stuff. LOL
