Gently flatten our the veal, use cling wrap if necessary not to pulverise it.
Dip in seasoned flour, very gently pan-fry in a little 50/50 butter-oil, don't brown too much.
Remove from pan, add some white wine, garlic, extra seasoning if needed to the pan and heat to a simmer. Finish sauce with a slurp of cream and reduce to good consistency. Add scallopini to the sauce for a minute or two.

this was delicious - I did do something different though - I also dipped the veal in breadcrumbs - gently pan fried, removed veal from pan then added the wine. Did not need to add seasonings because the particles from the breadcrumbs did the job. The veal did not need flattening - Costco has great veal scallopin already cut without the need the flatten. Next time though I might add fresh mushrooms. Anyway, we ate it all, served over buttered noodles with parmesan cheese mixed in it.
I know there are many people who won't eat veal but years ago when some members of my family had heart problems the doctors told them not to eat meat, the only meat they could eat was veal because of the low fat content. Their doctors said the veal was better than chicken. The veal was tender and I did not see any fat to cut off.
I will make this again.
Thank you so much for your help.

it 'brightens' the taste. here's the recipe I use. I use chicken not veal, but I would imagine that the recipe could be switched. http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=10000001012593enjoy!
