Our local diner has a Turkish chef, but since it is Greek owned he makes this soup fresh every Wednesday. It's worth a trip to this diner just for this soup!I've been looking up recipes on line and wonder about the following:
canned or fresh (roma) tomatoes (until we get summer ones in)?
tomato paste (some recipes have it and some don't)?
Fresh flat leaf parsley? (some have it some don't)
ditto dill?
white beans (I have navy beans, is that OK?)
The rest of the ingredients are onion, carrots, celery and olive oil. Anything else?

except I stick in some fresh spinach, cumin & coriander, maybe a little bit of sausage depending on the eaters.
Big Roma tomato fan here. They keep their shape beautifully. I never peel them, though.

one of my favorite foods. I learned to love Greek food when I worked as a waitress in a Greek restaurant. The tiropita was heavenly. There used to be another wonderful Greek restaurant here, that was one of our favorites, and sadly closed down some years ago. :(
I make other Greek dishes, but soup is one I have never tried. Cool idea!
