| Does anyone do Thai here? I have an eggplant question. |
|
I was wanting to fold in some eggplant instead of chicken to a batch of Pad Thai. Anyone have a suggestion for seasoning? I don't know enough about Thai yet to figure it out, just enough to get into trouble. :)

I think that Pad Thai always features beaten eggs and bean sprouts, but eggplant could be a substitute for pork or shrimp (or whatever!;) protein you prefer. The recipe I use seasons with, sugar, fish sauce, ketchup & lime juice. For garnish: red pepper flakes, sliced scallions, and chopped cilantro. Good choice of dishes for a hot day. :hi:
Edit for clarity

| 2. Follow this recipe. Substitute the eggplant for the protien. |

Be sure you peel the eggplant. The skin will overwhelm because it will probably fall off and be in the way. http://www.democraticunderground.com/discuss/duboard.php?az=show_topic&forum=236&topic_id=53961
