| CHEAP, easy morning muffin recipe |

I started out with a standard recipe and I have tweaked it to what we like:
1 cup flour 1 cup oatmeal 1/4 cup sugar 2 tsp baking powder 1/2 tsp salt 1 tbsp cinnamon 1/4 cup oil 1/4 fruit preserves (can substitute 1 egg) 1 cup fruit juice (can substitute milk)
Mix the dry ingredients...add the wet ingredients...hand mix until moist...put in well greased muffin pans...bake at 425 for 15 minutes.

I kind of cleaned out the fridge with the last batch, but were my favorites by far. I used 1/2 cup apple juice and 1/2 cup grape juice. I used strawberry preserves. The were a pretty brownish red color.

Gives it a really nice flavor. More than than makes it hard for them to set up properly.

I'm thinking of leaving out the preserves and the fruit juice - and subbing in some applesauce and maybe adding a 1/4 cup of chopped pecans.
Or maybe an 8 ounce can of crushed pineapple with its juice.
Or maybe some crushed bannana with pineapple juice. Add some allspice and nutmeg and I could turn this into hummingbird cake muffins. Can't do that though becaue then I might think the muffins need cream cheese frosting.

After you put it into the muffin tin, put about 1/4 to 1/2 teaspoon of preserves in each one and swirl it in with a toothpick. I told hubby we could make them and use a variety of preserves so we didn't end up with a big batch of one flavor.
