in anticipation of leaving on a vacation. I had forgotten how wonderful this type of salad can be...I just used evoo and red wine vinegar on it.
Can somebody offer some other healthy enhancements to the dressing? I don't have an herb garden unfortunately...

and really amp up the flavor. Dried herbs can work but dried garlic doesn't.

and I use it for chicken dijonnaise. The other is creamier and I use it for hubby's sandwiches. I think the latter might work best here...

I don't care for manhandling large pieces of raw veggies on my fork, so it's a fave.

What I made consisted of scallions, grape tomatoes, cucumber, radishes and celery.
I'm using up my arugula and snow peas tonight in a shrimp and penne dish. Barillo has good tasting whole wheat pasta...it goes on sale a lot at my supermarket...
