I have more than I can use but would like to harvest the 10 or so heads I have left. Somehow I must find a way to freeze this beautiful lettuce. BTW, it is a bear to wash! Since it has a similar taste to escarole and a crisp texture, I wonder if it is hardy enough that I can quickly blanch the washed leaves and add them to individual portions of chicken broth for use in the future when I make Grammas Chicken Soup. My old Italian Nana always added escarole to her chicken soup. I do the same but have never tried anything with Frisee. Think it would work?
I sure hate to waste this because, if you are able to find it at the grocery store, it is always just under $4.00 a head. I Googled for ideas but all I found were recipe's, no comments about freezing it in chicken broth.
