I used my go-to fish, farm raised catfish, because it's cheap, available and sustainable. Took 20 minutes and colored the fish nicely. Sauce was still a bit thin so I removed the fillets and reduced it slightly. Served it on Basmati rice and my wife pronounced it wonderful.
I'm sure the striped bass would have more flavor.
