What do you think?
So, I'm having a cocktail I just named a Vegan Brandy Alexander (I used chocolate almond milk...) after eating some tart cherry pie this evening, and I was hit with an inspiration: Cherry pie with chocolate brandy sauce.
So, I'm thinking about how to make a chocolate brandy sauce. Hardcore from scratch with melted chocolate (or ganache) and brandy? Or easy with chocolate syrup and brandy? How long to heat it? I wouldn't want it to evaporate all the alcohol -- I want it to have an edge like a chocolate covered brandied cherry. Should I mix some brandy right in with the cherry pie filling and put chocolate sauce on top of it?
Any chocolate wizards out there?
