it works nicely. This year, the carcass will make stock and the rest goes into enchiladas. Since living out here in the Latino heavy east side, we've been using pork to flavor soups and half the hassle of chicken or turkey enchiladas is cooking the chicken or turkey.

Stick the bones in the oven to roast for a bit then throw them in the pressure cooker with garlic, onion, celery, carrot, thyme and a bay leaf. After about an hour I strain it...add fresh veggies and cook a little more. Then I add the cooked rice and any left over meat bits.
It's simple but it's what the family likes.
