I took 3 good-sized white (light yellow) sweet potatoes, peeled and sliced about 1/3" thick and 3 Granny Smith apples cut in 1" chunks (skins left on). Sauteed them in a bit of butter and olive oil, added a tich of water, covered the ban to braise for a bit, then added some sugar and molasses and rum and dried cranberries and chopped pecans, and simmered to blend flavors and evaporate moisture.
The apples got all applesaucy by the time the potatoes were tender, and it's absolutely to die for. I also seasoned to taste with salt and freshly gound black pepper.
New holiday season favorite!!
ETA: I am having to restrain myself from eating the whole pan.

I often have 'plain' baked/nuked sweet potatoes for dinner.
Jacques Pepin did something similar w apples Saturday.

Almost like the seasonal yam dish that Trader Joe's has every year...which is also quite tasty. Any reason you don't use yams? Thanks for sharing.........z

Bake/roast the sweet potatoes and scoop them out of their skins. Whip up with some butter and cream and layer half in an oven proof dish. Then sautee some apples with butter and cinnamon and a little brown sugar. When the apples get a little soft pour them on top of the sweet potatoes. Then cover the apples with the remaining potatoes and bake for a half hour.When done top with candied pecans. (I use the sweet and spicy ones from Trader Joes)
