A person with a ham is welcome wherever they go |

We've had a $15 ham laying in the fridge since thanksgiving. Yesterday we baked it and had ham and potato salad for dinner. Today I took it apart and ran it through the slicer. We had ham sandwiches. There's a big, meaty shank that we'll use for hopping john next weekend. There was about a pound of scrap, some of which is baking in a pot of beans right now. We're left with about 4 pounds of sliced ham which will become ham and scalloped potatoes, Hawiian sandwiches, part of a frittata or noodle casserole and maybe even some deviled ham. It's hard to imagine life without ham, but by the end of the week I'm sure we'll be ready.

But I just love its myriad leftover uses! I may just go buy one. It freezes beautifully.

Safeway has them on special from time to time; usually for about $1.70 a pound. The shank end is the better buy. They're hard to beat for value, and better eating than a processed ham like Black Forest. You have to work a bit for it, but it's worthwhile.

on which reasonable men may differ. The butt tends to have more fat and cost a bit more. It also depends on whether the center parts of the leg has been removed for steaks and how long the shank bone is cut. What it gets down to is, I think the shank tastes better and we always buy the shank so we don't have to review these arguments every time we set out in pursuit of pig. Rules to live by.
